Hearty Beef Casserole Another delicious recipe brought to you by AMP Meats


Serves: 4-6  |  Time: 60 minutes  |  Level: Easy

  1. Place a large pan over high heat and add the mushrooms. Dry sauté them until they begin to release their water and brown. Remove to a bowl and set aside.
  2. Add the olive oil to the pan and turn the heat down to medium-high. Brown the Butcher’s Box Blade Stewing Beef in batches. Remove from the pan, add to the bowl with the mushrooms and sprinkle salt over them.
  3. Add the carrots and sauté 3-4 minutes. Add the onions and cook another 5 min- utes, then add the garlic and cook another minute. Add the wine, stock, beans and tomatoes, bring to a boil and return the beef and mushrooms to the pan. Reduce heat and let simmer for 45-60 minutes or until tender. Garnish and serve hot with your choice of starch.


  • 680g Butcher’s Box Blade Stewing Beef, cubed
  • 110g button mushrooms, quartered
  • 2 tbsps olive oil
  • 2 carrots, thickly sliced
  • 1 onion, chopped
  • 2 garlic cloves, finely chopped
  • 120ml red wine
  • 120ml beef stock
  • 400g red kidney beans, rinsed, drained
  • 400g chopped tomatoes
  • fresh thyme or oregano for garnish
