Beef Lasagna Another delicious recipe brought to you by AMP Meats

Method

  1. In a large pan, heat the olive oil and cook the onions for two minutes over medium high heat. Add the garlic and cook one more minute. Add the meat, stir and cook until there is no pink. Add the chopped tomatoes, tomato paste, 1 teaspoon salt, ¼ teaspoon pepper, oregano, basil, red pepper flakes and mint. Reduce to medium and simmer 10 minutes. Set aside.
  2. In a medium bowl, mix the ricotta, mozzarella, beaten eggs, Parmesan cheese, salt, pepper and the chopped parsley. Mix to combine and set aside.
  3. Preheat oven to 190°C and put oven rack in centre of oven.
  4. In a glass baking dish, ladle in one cup of tomato sauce into the bottom and lay four lasagna sheets overlapping slightly. Add one third of these cheese mixture, one third of the meat mixture and half of the sliced fresh mozzarella. Repeat with four more sheets, one third of cheese mixture, one third of meat mixture and the other half of sliced fresh mozzarella. Cover with four more sheets and top with remaining cheese mixture, remaining meat mixture and 1 ½ cups shredded mozzarella cheese. Finish with four more sheets, 1 ½ cups tomato sauce, 1 ½ cups shredded mozzarella and ½ cup grated Parmesan cheese.
  5. Cover tightly with foil and bake for one hour. Remove the foil and cook uncovered for 30 more minutes. Let rest 15-30 minutes before serving.

  • 2 tbsps basil
  • pinch chilli flakes
  • 2 tsps mint, chopped
  • 900g ricotta cheese
  • 100g mozzarella, grated
  • 2 eggs beaten
  • 100g Parmesan cheese, grated
  • 1 tsp salt
  • ¼ tsp black pepper
  • 3 tbsps parsley, chopped
  • 450g tomato sauce
  • 225g mozzarella, sliced
  • 3 cups shredded mozzarella
  • ½ cup grated Parmesan cheese
